Everyone loves a good Garden Party and this
Chive Cashew Cream is the perfect addition to your next picnic.
Ingredients:
• 2 cups of cashews,
soaked overnight
• 2 Tbsp apple cider vinegar
• 4 Tbsp lemon juice
• 1/2 tsp Himalayan salt
• 1 cup chopped baby spinach
• 2 Tbsp red onion, minced
• Handful chopped chives
Method
1. Drain water from soaked cashews and add to high speed blender
or food processor
2. Add vinegar, lemon juice, and salt, slowly increase speed to medium-high
and pause to scrape down sides, and resume until smooth
3. Add spinach and red onion to the cashews and blend until smooth,
look for a bright green color
4. Adjust salt and lemon to taste. Add to serving bowl and finish with fresh
chives.
Serve with crudités and crackers. This is an excellent gluten-free and
vegan party friendly appetizer. Tastes great as a spread for wraps and
sandwiches or mix with some pasta. Lots of options for this versatile dip!
