S u m m e r Q u i n o a S a l a d
To make four servings, prepare 1 cup rinsed quinoa in
two cups boiling water for 12 minutes (or as directed).
Prepare dressing and add to warm quinoa
• 3 tbs apple cider vinegar
• 2 Tbsp tahini
• 4 Tbsp olive oil
• 2 Tbsp coconut amino (or soy sauce)
• Pinch salt
Prepare and add salad mix-ins once quinoa cools. (Feel
free to modify fruit or nuts/seeds based on what you have on hand)
• 1 mango diced
• 1 avocado diced
• 1/2 cup sunflower seeds
• 1/3 cup dried cranberries
• Finish with diced chives for garnish
This light and refreshing quinoa salad is a perfection addition to
your next grill night or to bring along to a picnic.
