P u M P k i n s P i C e e n e r g y b i t e s 1 Perfect for an afternoon snack or treat, Pumpkin Spice Energy Bites are an easy, healthy treat! Made with pumpkin pie spice, pepitas, walnuts, coconut flakes and naturally sweetened with Medjool dates – everyone will love these delicious bites! Ingredients: • 1 cup Medjool dates, pitted • 1 tsp Pumpkin pie spice • 1 pinch Sea salt • 1/4 cup Pepitas, raw pumpkin seeds (A pumpkin seed, also known in North America as a pepita (from the Mexican Spanish: pepita de calabaza, "little seed of quash"), is the edible seed of a pumpkin or certain other cultivars of squash.) • 1/2 cup Walnuts, raw • Coconut flakes for garnish Recipe: Place all ingredients into a food processor and process until the mixture is finely chopped and sticky. Scoop dough from the food processor using a small/ medium cookie scoop or your hands and roll into balls using your hands. Place coconut flakes in a bowl and roll balls in coconut flakes to coat. Enjoy right away or store for later: place balls into a sealed storage container and store in the fridge for 1-2 weeks or the freezer for up to three months. l u C k y t r a V e l e r b o u t i q u e I started Lucky Traveler Boutique in 2020 after leaving my corporate job in 2019. During that time, I accumulated over twelve years of experience in retail and corporate at Bloomingdales and Bed Bath & Beyond. Shortly thereafter, I was diagnosed with Crohn's Disease. I thought my time of being sick was well behind me after my liver and portal vein transplant at age seven. From my trials and tribulations of being sick as a kid, you would think that I had seen it all. 25 years later my body thought otherwise. Ever since I was very young I knew I wanted to open a clothing boutique, but other things always seemed to get in my way. After my most recent diagnoses, I knew life was too short to keep pushing off a dream. It was either now or never. I decided to take a leap of faith and I have not looked back. Creating Lucky Traveler Boutique has been a labor of love and made me genuinely happy. It has given me purpose in life again after almost losing it since becoming sick. As many are weary of eating indoors and The Clean Plate Kitchen has limited space for social distancing, we have gotten creative and shifted gears to launch Feel Good Food at Home for the fall and winter months. We provide a locally sourced, organic, allergy-friendly meal and market delivery service of heat-&-eat meals: freshly prepared in small batches to provide high quality meals prepared with the intention to heat and enjoy at home. Orders can be placed online with contact-less delivery throughout Hunterdon County and the surrounding area. Pickup is also an option at The Clean Plate Kitchen, 49 Main St, Clinton, NJ 08809. Orders are placed by Sundays at 5:00 pm for delivery the following week. Ordering this way allows us to be more efficient.
