FeelGoodFoodAtHome.com today! Anthony and Nicole Piazza have owned and operated The Clean Plate Kitchen at their beautiful spot on the river in downtown Clinton for six years. During the pandemic, they've taken the opportunity to re-evaluate the needs of the community and have launched a ready-prepared meal delivery service with the same principles that they embody and offer in their restaurant. Locally sourced, organic, clean, allergy friendly, naturally gluten free – Feel Good Food. The Piazzas attended the Health Supportive Culinary Arts program at the Institute of Culinary Education in Manhattan. Aditionally, Nicole has been a holistic registered dietitian for almost twenty years. Together, Anthony and Nicole are raising their two daughters, Zinnia and Talulla. The meals that the Piazzas create are prepared with intention to make you feel good – about your health, your community, and your food! Their menu includes meals that are allergy friendly, gluten free, with many vegan options and all are full of flavor. The creation of Feel Good Food at Home during the pandemic brought awareness to the ongoing food crisis in America and the lack of access to healthy food. The Piazzas have currently raised funds and have donated over 3000 meals to local healthcare workers, first responders and the food insecure population in our community. This easy to prepare breakfast is satisfying, healthy and sure to please all the pumpkin spice lovers in your family. Serves 4-6. Prep time: 5 minutes (plus overnight). • 1 can (15 oz) pumpkin purée • 1 cup can coconut milk • 3/4 cup milk (almond or coconut) • 1/4 cup maple syrup • 2 tsp vanilla extract • 1/2 tsp pumpkin pie spice • 1/2 tsp cinnamon • Pinch of salt • 2 cups rolled oats • 3 Tbsp chia Optional topping ideas... • 1/4 cup chopped nuts or pumpkin seeds • 1/4 cup raisins Stir together all ingredients (except toppings), cover and refrigerate for eight hours.
