For a warm and comforting after school snack or an easy weekday dessert baked apples are sure to delight. • 4 apples • 1/2 cup toasted walnuts, chopped • 1/2 tsp vanilla • 3 Tbsp raisins • 1/4 tsp cinnamon • 2 Tbsp maple syrup • 1 lemon • pinch of salt Preheat oven to 350F. Core apples (I like gala, but choose what ever is local and fresh), be sure to vent the apples with paring knife or fork (designs can be a hit with kids). While coring, leave the base intact, so that the apple can hold the filling. Mix chopped walnuts, cinnamon, maple syrup, raisins, 1/2 lemon and salt together and stuff apples (try to keep raisins tucked into core, so they don't get too brown). Place apples in a baking dish with a couple inch rim, squeeze lemon over apples (and on designs if applicable) to prevent browning. Fill the baking dish with 1-2" water and place in the oven for 40-45 minutes. They should be soft, but still intact when poked with a knife. As you experiment with this recipe, you can get more creative with the filling - varying spices maybe to include cardamom, cloves, or nutmeg, possibly choosing different nuts and dried fruit and maybe even using apple cider (possibly spiked with brandy) instead of water for the cooking liquid. This comforting snack is sure to be a crowd pleaser and a healthy satisfying treat for kids and adults alike. Enjoy!
