Waking up to comforting pumpkin pie oats, as the first chill of fall sets in, is a
delicious way to start the day. This easy to prepare breakfast is satisfying, healthy
and sure to please all the pumpkin spice lovers in your family. Serves 4-6. Prep
time: 5 minutes (plus overnight).
• 1 can (15 oz) pumpkin purée
• 1 cup can coconut milk
• 3/4 cup milk (almond or coconut)
• 1/4 cup maple syrup
• 2 tsp vanilla extract
• 1/2 tsp pumpkin pie spice
• 1/2 tsp cinnamon
• Pinch of salt
• 2 cups rolled oats
• 3 Tbsp chia
Optional topping ideas...
• 1/4 cup chopped nuts or pumpkin seeds
• 1/4 cup raisins
Stir together all ingredients (except toppings), cover and refrigerate for eight hours.
Portion out and serve hot or cold with desired toppings. Enjoy all week long!

We at United Way of Hunterdon County continue to respond to and
