This easy to prepare breakfast is satisfying, healthy and sure to please all the pumpkin spice lovers in your family. Serves 4-6. Prep time: 5 minutes (plus overnight). • 1 can (15 oz) pumpkin purée • 1 cup can coconut milk • 3/4 cup milk (almond or coconut) • 1/4 cup maple syrup • 2 tsp vanilla extract • 1/2 tsp pumpkin pie spice • 1/2 tsp cinnamon • Pinch of salt • 2 cups rolled oats • 3 Tbsp chia Optional topping ideas... • 1/4 cup chopped nuts or pumpkin seeds • 1/4 cup raisins Stir together all ingredients (except toppings), cover and refrigerate for eight hours.
