Refreshing chilled soup, with fresh and in-season ingredients...
perfect for the hot days of summer! 4-6 servings
Ingredients:
• 1/4 red onion, diced
• 2 cucumbers, peeled, seeded, and diced
• 1 red pepper, diced
• 1 cantaloupe, peeled, seeded, and diced
• 4 cups coconut water
• 1 lemon, juiced
• 2 Tablespoons apple cider vinaigrette
• salt and pepper, to taste
• handful mint, chiffonade to garnish
Directions:
1. Clean, prep and dice red onion, cucumbers,
red pepper, and cantaloupe.
2. In separate large bowl add coconut water,
lemon juice, apple cider vinaigrette, adjust ingredients to taste.
3. Combine diced produce with liquid mixture and add salt & pepper to taste.
Allow to sit in fridge for at least 30 minutes for flavors to meld.
4. Serve chilled and garnish with fresh mint.
