Full of nourishing seasonal and local ingredients, roasted to bring out the natural flavors in the soup, satisfying to your belly and your soul. Prep time: 10 minutes/Cook time: 55 minutes/Total time: 1 hour and 5 minutes Ingredients: • 3 Tbsp olive oil • 2 lbs peeled and cubed butternut squash • 1 large yellow onion, diced • 1 large apple, cored, peeled and diced (I love honeycrisp) • 2 1/2 cups vegetable broth • 5 large sage leaves • 2 teaspoon cumin • 1 teaspoon cinnamon • 1 teaspoon smoked paprika • 1/2 teaspoon cayenne pepper • salt & pepper, to taste Recipe: Preheat oven to 400°F. Heat cast iron pot (something oven safe) with olive oil. Add butternut squash, onion, and apple and place in oven. Bake for 45 minutes, stirring every 15 minutes. Remove from oven and transfer to stove top. Add broth, sage leaves, cumin, cinnamon, smoked paprika and cayenne pepper. Stir to combine and bring to a low boil. Cook for 10 minutes to combine flavors. Puree until smooth with an immersion blender (or by transferring soup to a blender and blending until smooth). Season with salt and pepper to taste and serve hot! This year has been a difficult one for all of us, and the North Hunterdon Thrift Shop of Hampton can help you de-stress and get in the Christmas Spirit at its annual Holiday Sale. The non-profit shop's Christmas Wonderland Shop is now open upstairs and is filled with high-quality, low-cost decor, lights, gift wrap, children's clothing, ugly Christmas sweaters and more! Located at 51 County Road 635 (Charlestown Rd.) in Hampton, the shop also features its fall and winter clothing collection and household items on the first floor. The clothing collection includes winter jackets, gloves, scarves, winter boots and shoes and much more. Shoppers must wear face masks and follow safety protocols. New volunteers are always welcome. The shop is run by Clinton United Methodist Church and all proceeds support the church's missions and ministries. For the safety of everyone, donations of clean, good-quality clothing and home goods are being accepted in a contact-free process and BY APPOINTMENT ONLY, by calling 908.735.0177. During November, shoppers can earn "Give Thanks" donation coupons. Those who donate by appointment will get a $10 thank you coupon to use at the shop. This month, the shop seeks donations of winter coats, especially children's coats, men's sweaters, men's and women's jeans, kitchenware, ugly Christmas sweaters and anything related to Christmas! The shop also has a new Kid's Closet Program to supply free children's clothing to help families who are struggling during this time of pandemic. Applications are available at some local schools, the thrift shop and at the office of Clinton United Methodist Church. For Thanksgiving, the shop will be closed November 24 through November 29, and will reopen November 30. Shop hours are Monday, 8:30 am to noon; Wednesday, 8:30 am to noon and 3:00 to 6:00 pm; and Saturday, 8:30 am to 2:00 pm.
