P i s T a C H i o T o R T e W i T H C o C o n U T W H i P P e d C R e a m a n d R a s P B e R R i e s This high protein and easy to prepare torte could delight dinner guests and leftovers are a perfect treat with coffee for breakfast. Yield: one 8-inch torte Ingredients: • 1 teaspoon coconut oil (for greasing cake pan) • 3 cups shelled pistachios • 6 large eggs • 1 cup agave syrup (or maple syrup) • 1 can full fat coconut milk (chilled) • 1/2 cup organic confectioners sugar • 1 teaspoon vanilla extract • Raspberries to garnish 1. Heat oven to 350° F. Oil and line 8-inch cake pan with parchment. 2. In food processor, pulse nuts to fine meal. Add eggs and agave syrup to food processor and process until smooth. 3. Using rubber spatula, transfer batter to prepared cake pan. Bake 40-45 minutes or until cake is firm to the touch. 5. Allow cake to cool for about 5 minutes. Use a knife to cut cake away from sides of pan. Unmold cake onto cooling rack. 6. Using stand mixer or hand mixers to whip coconut cream (only use hardened coconut cream, pour off liquid abd save for another use) in a chilled bowl about 5 minutes. Add confectioners sugar and vanilla and whip until starts to fluff and store chilled until ready to serve. Serve with coconut cream and raspberries. Shoulder pain is a very common issue that can be corrected and prevented from reoccurring if treated properly. The shoulder joint has the most movement of any joint in the body, therefore it requires the muscles that surround it to work extremely hard. There are many deficits that can cause shoulder problems but the prevailing cause is usually issues with the rotator cuff muscles. The rotator cuff is a group of four muscles that are the main stabilizers of the shoulder. They allow us to be able to throw, reach and repetitively use our arm at all angles. Issues with the rotator cuff lead to pain from issues such as impingement (pinching on the tendon) and tendonitis (inflammation of the tendon). Regaining and maintaining proper range of motion of the shoulder, having proper strength and endurance of the shoulder muscles as well as proper shoulder mechanics are imperative to keeping the shoulder healthy and pain free. Marty Campanelli will present "A Sampling of Hunterdon County Needlework," a lively and colorful Powerpoint detailing current research on the various styles of schoolgirl samplers created in Hunterdon in the early 1800's. Personal life stories about some of the sampler makers will also be featured. Mrs. Campanelli has written books and magazine articles on this fascinating subject, and was one of the co-curators for the New Jersey sampler exhibit at Morven Museum in Princeton in 2014.
