This is a vegan and health supportive twist to a traditional family holiday
classic cookie. With unrefined sugars, whole wheat pastry flour and no butter or
egg, this cookie is sure to surprise your guests being as delicious as its conventional
counterpart. Makes 2 dozen (2" cookies)
Ingredients:
• 1 cup almonds
• 1 cup whole wheat pastry flour
• 1 cup rolled oats
• 1/4 tsp cinnamon
• 6 Tbsp melted coconut oil
• 1/2 cup maple syrup
• Pinch of salt
• Berry preserves of your choice
1. Preheat oven to 350F and line 2 baking sheets with parchment paper
2. Grind almonds, flour, oats and cinnamon in food processor to a fine meal.
3. In a separate bowl combine oil, syrup and salt. Pulse into dry ingredients until
well combined dough is formed.
4. Scoop out using tablespoon and form into a ball. Use your thumb to indent
center of cookie and fill with a small amount of preserves. Bake for 15-20 minutes
or until golden brown. Enjoy!
