Look what's springing up... a zesty lemon ginger coconuty energy bite! Perfect
for welcoming spring and reminding us of the taste of summer. The ingredients
are simple and variations can easily be made based on your preferences.
This tasty treat does not contain any added sugar, is gluten free,
vegan and takes about 15 minutes start to clean-up. You could freeze this
yummy dessert or it will last at least a week in the fridge. Great for an afternoon
pick me up or an after dinner treat - the refreshing lemon and grounding ginger
gives it an indulgent feel.
Here's the dish...
• 1 cup medjool dates (about 10 or 11 dates, pitted)
• 1 cup raw cashews
• 1/2 shredded unsweetened coconut (plus extra for dusting balls at the end)
• 1/2 tsp vanilla
• 1/2 tsp ground ginger
• 1 lemon zested
• 1 lemon juiced
• Couple turns Himalayan Salt
Soak dates in hot/boiling water while prepping the rest of the ingredients. Once
dates are soft, drain off excess water. Add all ingredients to the food processor
- blend until a dough starts to form, stop and scrape down sides periodically.
Should take about 3-5 minutes to blend to a nice consistency - some chunks of bits
remaining but a rather uniform,sticky dough texture. Roll a rounded tablespoon
of dough into a ball and then dust in extra coconut. Store in the fridge for about
an hour to firm up a bit or freeze to save and enjoy now or later!
