Despite our best intentions, we made a mistake on The Clean Plate Kitchen's recipe in our September issue and inadvertently listed the wrong directions. Thank you so much to Norann, one of our sweet readers, for pointing that out to us (and for the compliments on our publication). We sincerely apologize to the Piazzas, owners of The Clean Plate Kitchen, for the mistake and also to the rest of you who might have been flummoxed by the whole thing. (Kale doesn't belong in this dish, unless of course you want it to.) Here's the full recipe: Maple-Chipotle Roasted Carrots (This sweet and spicy side dish adds a pop of color and will have everyone in your family eating their veggies.) Servings: 4 | Prep time: 5 minutes | Cook time: 30 minutes Ingredients 2 pounds carrots - peeled and cut into 2-3 inch strips 1 1/2 Tbsp olive oil 2-3 Tbsp maple syrup 1 Tbsp apple cider vinegar 3/4 tsp chipotle powder 1 tsp Himalayan salt 1/4 tsp ground pepper 2 Tbsp freshly chopped parsley 1/2 cup pomegranate seeds Directions 1. Preheat oven to 425F. Toss carrots, olive oil, salt, pepper, and chipotle on baking sheet. Place in oven for 10 minutes. 2. Whisk maple syrup, apple cider vinegar together - drizzle on top of the carrots. Place carrots back in oven to roast for 20 minutes - check and stir occasionally. 3. Garnish with fresh parsley and pomegranate seeds just before serving. Enjoy! – Nicole Piazza, MS, RD, The Clean Plate Kitchen Speaking of plates, mine has been full lately. All three of our kids have left, and are leaving, our nest. (Can I blame the above mistake on this life change? Yes, I think I can/will.) College, careers and apartments – oh my! In early September, we dropped our youngest off at college. I thought that I would go through that momentous occasion tearfully but, actually, it wasn't so bad. I have been so happy to see each of our children start that exciting chapter in their lives and our youngest son is no exception. My biggest hope for all of our kids – both yours and ours – is that they are happy and healthy in their chosen schools. Also, of course, I hope they greatly benefit from the experience both academically and socially. As much as my kids really appreciate (and, dare I say, love) their Clinton Township and Hunterdon County friends, they've all enjoyed meeting fellow students from other parts of the state, the country, and the world. Their pre-conceived thoughts and opinions on every subject have been challenged – and that's also something I really appreciate. Having been through the college application process three times now, I feel like I could write a book. Of course, it's a different situation for each kid, with each school, during each year. I and a lot of you, my fellow Class of 2018 parents, are going through a bit of College-Application- PTSD, so to the rest of you: please be patient with us. The first of the Early Application and Early Decision deadlines is approaching. The difference between the two? Just remember that the "D" in Decision rhymes with "B" and that stands for Binding, as in: Legally. High School Seniors: Unfortunately, there's no perfect formula for getting into the school of your choice. Keep your wits about you and know that it WILL all work out well. Keep in mind that RVCC is one of the best community colleges in the country. Underclassmen: do the best you can academically – it will pay off in the long run for you. Born on an Army base, I believe that the military is a great and noble option for some of you (and thank you in advance). We also need our tradespeople – but I would suggest you consider taking some business courses too. You might own your own someday! Lastly, to all of the parents of these teens: bless your (exhausted) hearts... stay strong! – Julie Fl�nn
