Try this easy to prepare salad full of super foods containing super
benefits. This tasty recipe is great to bring to your next picnic. Because
of the sturdy greens, you can prepare the recipe a day ahead and store
in the fridge.
Serves: 6 Prep time: 15 minutes
Ingredients:
• 1 head of kale
• 2 cups baby spinach
• 2 avocados, diced
• 1 cup radishes, chopped
• 1 pint cherry tomatoes, cut in half
• 1 english cucumber, diced
• 1 can garbanzo beans,
drained and rinsed
• ½ cup tahini
• ¾-1 cup water
• 1 lemon, juiced (about 3 tablespoons)
• 1-2 large garlic cloves, minced
• Salt and Pepper to taste
Dressing:
Directions
1. Clean kale, remove rib and chop roughly. Tear baby spinach to bite size pieces.
2. Toss remaining ingredients together.
3. Prepare dressing - mix together with a whisk.
4. Dress the salad and let sit for 30 minutes to allow flavors to mingle.
5. Enjoy!
