This tasty recipe is great to bring to your next picnic. Because of the sturdy greens, you can prepare the recipe a day ahead and store in the fridge. Serves: 6 Prep time: 15 minutes Ingredients: • 1 head of kale • 2 cups baby spinach • 2 avocados, diced • 1 cup radishes, chopped • 1 pint cherry tomatoes, cut in half • 1 english cucumber, diced • 1 can garbanzo beans, drained and rinsed • ½ cup tahini • ¾-1 cup water • 1 lemon, juiced (about 3 tablespoons) • 1-2 large garlic cloves, minced • Salt and Pepper to taste Dressing: Directions 1. Clean kale, remove rib and chop roughly. Tear baby spinach to bite size pieces. 2. Toss remaining ingredients together. 3. Prepare dressing - mix together with a whisk. 4.
